Raspberry Vanilla Creme – W3

Makes 2 cups

This simple, sweet crème is an elegant topping for your Berry Parfait.  Using tofu reduces the calorie density, but it still should be eaten with mindful consumption.  You can also swap out other varieties of fruit for the raspberries.  Some suggestions include mango, banana, and cherry.

1 (12-ounce) block tofu, extra firm

8 dates, pitted and soaked

2 teaspoons vanilla extract

2 cup raspberries, fresh or frozen, thawed

To make puree:  Soak dates in warm water for at least 20 minutes.  Drain the dates, reserving the soaking liquid.  Place the dates in a high-speed blender or food processor.  Add a tablespoon of the soaking liquid and puree the mixture until you achieve a paste-like consistency.  Place the remaining ingredients in the blender.  Blend until smooth.  If the mixture is too thick, drizzle in some of the date soaking liquid, one tablespoon at a time, to reaching the desired consistency.  Chill until ready to serve.
